Mussel season in the Netherlands
TL;DR
Mussel season in the Netherlands runs from early July to April. The mussels on Dutch menus are Zeeland mussels, grown on underwater plots in the Oosterschelde and the Waddenzee and sold through one auction in Yerseke. Order a pan per person (about a kilo), eat them with fries or bread, and use an empty shell as tweezers.

When does mussel season start?
There is no fixed opening date. The sector starts fishing when the mussels have enough meat, and that depends on the spring weather. Mussels spawn in April and May and need a few weeks to fill their shells again. In a normal year the first bottom-culture mussels come out of the water in early July.
The last two years ran early. In 2025 the first Zeeland mussels came up on 20 June, and in 2026 the first catch from the Oosterschelde followed on 18 June, about two weeks ahead of the usual date for the second year running. The growers’ organisation expected a larger harvest after two difficult years, with healthy stock and good meat percentages, as Vismagazine reported at the 2026 start.
Hanging-culture mussels, grown on ropes in the water, are ready even earlier, around early June. Most restaurants wait for the bottom-culture mussels, which are the classic Zeeuwse mosselen.
Why the months with an R rule no longer holds
Older Dutch and Belgian diners still say you should only eat mussels in months with an R in their name. The rule comes from the days before refrigeration, when mussels spoiled in warm weather. With chilled transport the sector now sells mussels from July to April, and the mussel growers call the R rule a stubborn myth. Their own rule is simpler: mussels in summer, autumn and winter, none in spring.
How are Dutch mussels grown?
Zeeland mussels grow on the sea floor. Growers collect young mussel seed, spread it over plots on the sea floor, and move the mussels to new plots as they grow, removing starfish along the way. A mussel takes a little over two years to reach market size. The plots cover about 7,000 hectares, most of them in the Waddenzee and the rest in the sheltered Oosterschelde.
Every lot then goes through the Nederlandse Mosselveiling in Yerseke, which calls itself the only mussel auction in the world. The auction samples each lot for size, meat weight and waste, publish the results, and traders bid. After the sale the mussels rest on a plot near Yerseke to rinse themselves free of sand, a step called verwateren, before they are cleaned and packed.
How do restaurants serve mussels?
A Dutch restaurant brings mussels in the black pot they were cooked in. The standard version is mosselen naturel: steamed with celery, leek and onion. Menus add variations on top: mussels with white wine and garlic, or fried, breaded and gratinated mussels. Fries come on the side, and so do cold sauces for dipping: ravigotesaus (herb mayonnaise), knoflooksaus (garlic sauce) and mustard sauce.
The way to eat them is the same everywhere:
- Pick out one mussel with your fork and eat it.
- Keep that empty shell and use it as tweezers for the rest.
- Drop the empty shells in the lid or the extra bowl the waiter brings.
- Dip your bread or fries in the broth at the bottom of the pot.
Menu words like ravigote and knoflooksaus are all in the Dutch menu decoder, so you can read the mussel menu before you order.
How many mussels per person?
Order about one kilo per person as a main course with fries or bread. Restaurants serve a pan per person, and some offer a smaller pan as a starter. If you cook them yourself with only bread on the side, Dutch recipe sites count 1.2 to 1.5 kilos per person.
Where to eat mussels in the Netherlands
You find mussels on menus all over the country from July, from Amsterdam brasseries to beach pavilions on the North Sea coast. The freshest pans are in Zeeland itself, in mussel villages such as Yerseke and Bruinisse on the Oosterschelde. Yerseke also hosts Mosseldag, a mussel festival held on the third Saturday of August since 1972.
What else is in season with mussels?
The mussel season overlaps with game in autumn and with oliebollen at the end of the year. See the Dutch food calendar for every season month by month.
